All My LUV Cookie Recipe
Many of our LUVly customers at the Cafe have requested our chocolate chip cookie recipe. Like everything at the LUV Ice Cream Cafe, our chocolate chip cookies are gluten free, soy free, diary free and made without added sugar. I’ve played around with lots of gluten free cookie recipes over the years, but I keep coming back to this delightful creation. I hope you LUV it too!
Preheat oven to 375 degrees
Dry Ingredients:
1 1/4 cups blanched almond flour ( I like Kirkland brand)
1/2 cup shredded unsweetened coconut
1/3 cup Sweet LUV™
1/3 cup LUV Chocolate Chips
1/2 tsp baking powder
1/4 tsp salt
Mix all dry ingredients
Wet Ingredients:
3 Tbls melted coconut oil (not hot)
1 egg beaten
1/2 tsp pure vanilla extract
Combine wet and dry ingredients and form a tight ball. Cover with plastic wrap and refrigerate for one hour minimum. Dough can be kept overnight in the refrigerator.
Portion dough into little round balls of 35 grams each. Flatten with the palm of your hand and bake at 350 degrees for approximately 11 minutes or till light brown. Cool thoroughly and enjoy!
